Happy Chanukah!

When I was in elementary school, I was invited to a Chanukah party for the boys down the street.  The mom served ten or so rambunctious kids latkes.  I had never had them before.  I ate every single one placed in front of me, and when there were no more, the mom played into the Jewish mom stereotype and whipped up another batch.  No way was anyone going to leave hungry.  Not on her watch.  All the other kids were playing a dredel game, but not me.  I sat alone at the dining table waiting for a hot plate of latkes.  Thus began my love affair with potato pancakes.

Here's the recipe we use from The Best of Jewish Cooking:
  • 4-5 large raw potatoes
  • 1 medium onion
  • 2 eggs
  • Kosher salt
  • freshly ground pepper
  • 1/4 cup matzoh meal
  • peanut oil
Pare vegetables and grate.  Add eggs, salt, pepper, and matzoh meal.  Drop by tablespoons into hot peanut oil which is almost deep enough to cover the pancakes.  Add oil as needed.  Fry over high heat until browned on one side.  Turn and brown other side.  Drain on absorbent paper towels.  Serves 4-6.

Serve them up with some applesauce.  Expect to make more.  Chag sameach.

YUM! What could be bad?

Question--grate, not chop, the onion as well as the potatoes?

BBM- That's exactly how the recipe is written (to grate the onions). I think we've done it both ways, and I have no preference on the matter.
