I was searching through one of our cookbooks that requires very few ingredients and came across a pork chop recipe. Smallgood Marmie made the most incredible "OMG I want thirds" pork chops a few months ago, and so Bigbad and I sort of blended the two recipes to make Apple Butter & Peach Pork Chops.
- 4-6 pork chops (the thicker ones not the breakfast version)
- 4 Tblspoons apple butter
- 1 sweet onion (chopped up)
- 1 peach (cubed)
We started by prepping a skillet and cooking the pork chops and onion until the pork chops were brown on each side. That took about 5 minutes, and then we added the peach and apple butter. We lowered the heat and covered the pan. That cooked another 8 minutes or so.
We took the lazy way out and heated up some frozen sweet potato fries, and it was time to enjoy. The fruit makes the pork chop so sweet, and it's a good condiment to dip the sweet potato fries into as well.
